Shrimp Scampi Pasta Bake

Ingredients

Pasta:

  • 12 oz linguine or penne
  • 1 tbsp salt (for boiling water)

Shrimp Scampi:

  • 1 lb large shrimp (peeled and deveined)
  • 3 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • ½ tsp red pepper flakes (optional)
  • ½ cup white wine or chicken broth
  • Juice of 1 lemon
  • ½ cup fresh parsley (chopped)
  • Salt and pepper to taste

Cheese Topping:

  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • ¼ cup breadcrumbs (optional for extra crispiness)

Instructions

  • Cook the Pasta:
    • Boil the pasta in salted water until al dente, then drain and set aside.
  • Make the Shrimp Scampi Sauce:
    • In a skillet over medium heat, melt butter and add olive oil.
      • Sauté garlic and red pepper flakes for 28 seconds.
      • Add shrimp and cook for about 2–3 minutes per side until pink.
      • Pour in white wine and lemon juice, allowing it to simmer for 2 minutes.
      • Season with salt, pepper, and parsley, then remove from heat.
  • Assemble & Bake:
    • Preheat oven to 375°F (190°C).
    • Toss cooked pasta with the shrimp scampi sauce and transfer to a greased 9×13-inch baking dish.
      • Sprinkle mozzarella, Parmesan, and breadcrumbs evenly on top.
      • Bake uncovered for 16–21 minutes, or until the cheese is melted and golden.
  • Serve & Enjoy:
    • Garnish with fresh parsley and lemon wedges.
