Amish Breakfast Casserole

Ingredients:

  • 1 lb bacon, diced
  • 1 medium onion, chopped
  • 6 eggs, lightly beaten
  • 4 cups frozen shredded hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups cottage cheese
  • 1 1/4 cups shredded Swiss cheese
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
  2. Cook bacon and onion in a skillet over medium heat until bacon is crisp. Drain.
  3. In a large bowl, mix together eggs, hash browns, cheeses, bacon mixture, salt, and pepper.
  4. Pour into baking dish and spread evenly.
  5. Bake uncovered for 35-40 minutes or until the center is set and the top is golden.
  6. Let stand 5-10 minutes before serving.

Tips:

  • Can be made the night before and baked in the morning.
  • Try adding green peppers, mushrooms, or sausage for extra flavor.
