Layer 1: Biscuit Base
200 g crushed biscuits (like Petit Beurre or any plain cookies)
70 g melted butter
Layer 2: Cream Filling
250 g cream cheese (Philadelphia or similar)
1 cup cold heavy cream (whipping cream)
1 vanilla yogurt (optional)
4 tbsp sugar
1 tsp vanilla
Juice of 1/2 lemon
Layer 3: Golden Crumble / Cake Layer
2 eggs
1/2 cup sugar
1/3 cup oil
1/2 cup milk
Juice + zest of 1 lemon
About 1 cup flour
1 tsp baking powder (7 g)
INSTRUCTIONS :
1 Biscuit Base
Mix the crushed biscuits with melted butter.
Press the mixture into a glass dish (Pyrex).
Place it in the fridge for 10 minutes.
2 Cream Filling
Beat the cream cheese with sugar and vanilla.
Add the heavy cream and whip until light and fluffy.
Add the lemon juice.
Spread the cream over the biscuit base and refrigerate again.
3 Golden Top Layer
Whisk the eggs with sugar until pale and creamy.
Add oil, milk, lemon juice, and lemon zest.
Add flour and baking powder.
Pour this mixture gently over the cream layer.
Bake at 180°C (350°F) until golden on top.
