INGREDIENTS :

Base Layer

2 cups crushed graham crackers
1/2 cup melted butter
1/4 cup granulated sugar

Cream Layer

1 package (8 oz) cream cheese, softened

one cup powdered sugar

1 cup whipped cream (or whipped topping)

Pineapple Coconut Layer

1 can (20 oz) crushed pineapple, drained
1 cup shredded coconut (toasted or untoasted, depending on preference)
1/4 cup granulated sugar

Topping

1 cup whipped cream (or whipped topping)
1/4 cup toasted coconut for garnish
Fresh pineapple slices (optional)

Instructions

1. Prepare the Base Layer

Crush the Graham Crackers: Place graham crackers in a resealable plastic bag and crush them using a rolling pin until fine crumbs form. Alternatively, use a food processor.
Mix the Ingredients: In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the texture resembles wet sand.
Assemble the Base: Press the mixture firmly into the bottom of a 9×13-inch dish to create an even layer. Use the back of a spoon or the bottom of a glass for a smooth surface. Refrigerate for at least 20 minutes to set

2. Create the Cream Layer

Soften the Cream Cheese: Beat the softened cream cheese in a large bowl until smooth and creamy.
Add Sweetness: Gradually add the powdered sugar and continue beating until fully incorporated.
Fold in Whipped Cream: Gently fold in the whipped cream (or whipped topping) until the mixture is light and fluffy.
Spread the Layer: Evenly spread the cream cheese mixture over the chilled graham cracker base. Smooth it out with a spatula for an even layer.

3. Prepare the Pineapple Coconut Layer

Drain the Pineapple: Drain the crushed pineapple thoroughly to remove excess moisture. Press lightly with a paper towel if needed.
Combine Ingredients: In a medium bowl, mix the drained pineapple, shredded coconut, and granulated sugar until well blended.
Add the Layer: Gently spread the pineapple-coconut mixture over the cream cheese layer. Ensure even coverage for a balanced flavor.

4. Finish with the Topping

Whipped Cream Layer: Spread a generous layer of whipped cream (or whipped topping) over the pineapple-coconut mixture. Use a spatula to create swirls for a decorative effect.
Add Garnishes: Sprinkle toasted coconut on top for added texture and a pop of flavor. If desired, decorate with fresh pineapple slices or a drizzle of caramel sauce.
